The blades are made from food-compliant 420B stainless steel, and s 52 to 54 HRC (Hardness Rockwell C-Scale). Please note that as the blade is made from stainless steel, it does rust if not dried properly after each use. 

Deejo knives are ideal for everyday use to cut fruit, meat, paper, and small ropes. They are NOT designed to chop wood or hard stuff.
